Despite barley being used as a grain since ancient times, the value of barley as a grass was, unfortunately, overlooked for many decades. Barley grass is in fact the most nutritious of all green grasses, possessing remarkably abundant amounts of vitamins, amino acids, proteins, minerals, enzymes, chlorophyll and antioxidants. All of these are tremendously important for their own reasons. However, despite this high density of goodness, we as humans are not able to effectively derive this nourishment due to the presence of fiber in the barley grass. Because we do not possess the enzymes to break down this fiber, it results in the nutrition remaining insoluble and “locked up”.
