Despite barley being used as a grain since ancient times, the value of barley as a grass was, unfortunately, overlooked for many decades. Barley grass is in fact the most nutritious of all green grasses, possessing remarkably abundant amounts of vitamins, amino acids, proteins, minerals, enzymes, chlorophyll and antioxidants.
